<span style="font-size: large;">I had heard of Thomas Keller way back when, but for some reason I had never ever heard of Bouchon Bakery. When a friend (Thank you so much Shibu!!) told me that she had a copy and I just HAD to take a look at it, I could'nt resist.I had'nt even got past the foreward and I knew I was going to be hooked.</span><br />

<span style="font-size: large;"> One to cradle to bed with me.</span><br />
<span style="font-size: large;"> And stretch out lazily with on afternoons off.</span><br />
<span style="font-size: large;"> (I know it might sound like I'm talking about a baby here; but stay with me, I'm still talking about the book !! :) ) So thanks to an older brother who completely spoils me, I got one for my birthday!! :) </span><br />

<span style="font-size: large;">This is how cookbooks should be written. Filled with memories, inside stories and words that make you sure that the person/people who wrote it have nothing short of a love affair with all the recipes in the book.</span><br />
<span style="font-size: large;">It's the perfect cross between home baking and professional baking. </span><br />
<span style="font-size: large;">And the pictures, dont even get me started.</span><br />
<span style="font-size: large;">Everyone likes to pretend that we don't buy a book based on the pictures, but really now, who are you kidding?</span><br />
<span style="font-size: large;">Big. Glossy. Step by step pictures of Raspberry palmiers and Florentines and Eclairs getting built up.</span><br />

The original recipe for these marshmellows used Champagne but I decided to substitute it with red wine instead.</div>

Be d, Marshmellows can be a little bit tricky, mostly because you need to get the correct consistency of the sugar syrup before whisking it. But these are totally, absolutly worth it. You can use white wine too. But try and stick to drier varieties since the rest of the recipe is essentially only sugar.</div>

Makes about 30 pieces.</div>

21 gms gelatin<br />
155gm Red Wine <br />
155gms Liquid Glucose/Corn syrup<br />
225gms Red Wine<br />396gms grain sugar<br />
1/2 tsp salt<br />
optional: 1 vanilla bean, seeds scraped and pod reserved for another use<br />
<br />
Sifted icing sugar + cornflour for dusting<br />
<br />
<i>Method</i> <br />
<ul>
<li>Lightly grease a 9inchx 9 inch square pan. </li>
<li>Combine the gelatin along with the 115gm Red wine in a bowl and set aside. If you are using a stand mixer, combine these two in the stand mixer bowl. </li>
<li> Pour the 225gms or red wine in a pan and reduce it to half the quantity over medium heat. Weigh the red wine after redcing it to make sure it is now 113gms. If you reduced it a little too much add a little red wine to bring it back to 113gms.</li>
<li>In the same pan,to the red wine reduction add the corn syrup, sugar, salt, and vanilla bean scrapings. Set over
medium heat and stir gently until the sugar melts.</li>
<li>Once the sugar has melted, allow it to cook, without stirring until the mixture reaches 240 degreesF on a candy thermometer. i.e the softball stage.</li>
<li>Once it does, take it off the gas and let it cool to about 210 degreesF. If you proceed to the next step while it is too hot, it will prevent the gelatin from setting properly. </li>
<li>Next, Pour this mixture into the gelatin/red wine mixture and whisk on medium until the gelatin has melted.</li>
<li>Then turn up the speed to high and allow it to whisk until the mixture almost triples in volume.</li>
<li>I know this seems a little bit impossible, but don't worry, IT WILL HAPPEN!</li>
<li>Shut off the mixer and pour the marshmellow mix into the greased tray quickly. ( Don't be in a such a hurry to lick the whisk. You can do that later :P )</li>
<li>Hit the pan against the table top once or twice to disperse and air bubbles , dust the top with icing sugar, clingwrap and refrigerate overnight.</li>

To demould the marshmellows,run a knife along the side of the pan, reach in with you fingers and gently pull the marshmellow sheet out onto a icingsugar+cornflour dusted cutting board. </div>

<li>Using a clean knife cut thick strips and immediately roll those in the dusting mixture and set asid.</li>

It has been one of those weeks.<br />
Living in Delhi has started to feel like I stuck my head in the freezer and cannot manage to get it out. Which is probably why I now go to work every morning in my thickest sweatshirt ad a scarf wrapped around my face looking like a ninja while everyone else jogs along happily in shorts.<br />

Also I've run out of hankerchiefs and cannot find the entire packet of washing powder I bought yesterday.<br />
My (not so happy) tooth is pounding away at my head and the dentist here suggested I get implants!!!<br />

Also, I've recently figured out that being an adult includes cleaning the gunk at the bottom of the sink ,paying my own bills and dealing with vagabond monkeys.<br />
Yes, I said monkeys.<br />
Apparently, when I signed on to this I was'nt adequately warned.<br />
I was making breakfast alone at home in the kitchen and all of a sudden a spot a shadow from the corner of my eye.So, I look to the left,and there it is.<br />
A monkey.<br />
Staring at me.<br />
WHAAAAATT?!!?!?<br />
I screech and run into the hall and well, there are two more monkeys.<br />
One is holding an orange.<br />
Hilarious, I know. <br />
This is delhi people, anything can happen.<br />

They look at me like I'm retarded. Then, run out into the balcony.<br />
I try and lock the balcony door. With my luck so far, I fumble.<br />

Powder the digestive biscuits.Melt the butter and mix all the ingredients for the crust together.It should resemble the consistency of wet sand.A good way to test if you've got the right consistency is to squeeze a portion of it tightly in your hand, it should hold together for a few seconds and not crumble apart immediately.</div>

Preheat the oven to 180'C. And heat some water upto boiling point.Combine cream cheese and sugar in a bowl and beat well till smooth.</div>

Add oin the eggs, one at a time, mixing well between each addition.Make sure to scrape the sides and bottom of the bowl from time to time so u dnt get lumps at the end.</div>

Add in vanilla ess and cream and beat well till blended.</div>

Pour over the crust and tap the mould on the table once to get rid of any air bubbles</div>

Place the mould into a waterbath with wateralmost upto halfway upto the sides of the cheesecake tin</div>

Cover with tin foil and Bake at 180'C for about 12 min.The cakes should still have a bit of a jiggle in the center.</div>

|Turn of the oven and let it rest in the oven for abt 40 min</div>

Chill the cheesecakes overnight. (if I'm in a hurry I allow them to set in the freezer for a few hours instead)</div>

Once in a while you come across a recipe that you just HAVE to try. Now, most people just look at the pretty pictures in magazines or cookbooks and move on . But every now and then, the skies open up and a light shines through and you know that there will no longer be peace in the universe until you make the recipe.<br />

So, it's safe to say that all is well in the universe again, because I managed to whip these up and share em' with some very happy (and lucky, mind you :P:P) friends yesterday.<br />

While I was watching the Masterclass episode where these were made, they seemed pretty darn easy. Its just a simple cake, a buttercream frosting and a little flavoured syrup. After that it's just a matter of assembling it all.<br />
The cake is all fancy because it does'nt use baking powder/baking soda for leavening, the eggs do all the work!! It's called a Genoise sponge, and honestly, I'd be lying if I said I was'nt a bit worried. But they turned out perfectly!!!<br />

Masterchef Australia season 4<br />
<br />
<i><u>For the syrup:</u></i><br />
30gm sugar+ 45ml rum+ 10 ml limejuice+Zest of 1 lemon+Mint leaves+ 100 ml water<br />
heat all the ingredients in a pan till the sugar has just dissolved and turn off the heat, and leave to infuse. <br />
<br />
<i><u>For the Genoise Spongecake:</u></i><br />
6 eggs<br />
260gms Castor sugar<br />
150gms melted Butter<br />
260gms Refined flour<br />
<br />
<ul>
<li> Preheat the oven to 180'C</li>
<li>Whisk the eggs and castor sugar over a double boiler with an electric whisk. Continue to whisk until the mixture reaches a ribbon consistency. ( About 10 minutes).You can test it by lifting a little mixture with a spoon and drooping it back into the bowl, while moving the spoon. the misture should not sink immediately and should leave a visible trail.</li>
<li>Once it reaches this stage, whisk it off the double boiler for a few minutes to cool it slightly. Now pour in the melted butter along the sides of the bowl and slowly fold it in.</li>
<li>Pour in the flour in the same manner a little at a time and fold it in. This is done to make sure that you don't knock out the air from the batter as this is what will allow the cake to rise in the oven. Moving the batter around too much, or not folding ingredients in gently will cause it to loose all the air you whisk into the eggs.</li>
<li>Pour the batter into cupcake cases and bake immediately for 10 minutes or until a skewer comes out clean.</li>

<u>Mint and lemon Buttercream: </u><br />

150gms unsalted butter<br />
300gms Sifted Icing sugar<br />
5gms Mint leaves<br />
Zest of 2 lemons<br />

<li>Whisk the butter until slightly creamy.now add in the icing sugar a little at a time, whisking continuously. Once all the icing sugar is almost added in, add in the mint leaves and lemon zest and whisk.</li>
<li>Pipe or spread on the cupcakes and top with a lemon wedge.</li>
<li>* Do NOT skip the lemon wedge!!! I know squeezing lemon juice on a cupcake before eating it might sound weird, but the little burst of lemon juice over the buttercream icing just before eating the cupcake it what makes it beyond heaven!!!</li>

Iv'e put together a few little pointers that I think might help :) Any questions are welcomed :) <br />

<li>Be a little patient.It's a little tricky to get the consistency right but you'll get the hang of it soon enough.</li>
<li>Always, I repeat ALWAYS sieve the icing sugar. Sure, it takes a little extra time but little lumps of icing sugar at a later stage and a complete nuisance .</li>
<li>Gel colours are highly recommended.They give you and even,vivid colour without changing the consistency of the gumpaste and making it sticky. Otherwise, you will end up adding more icing sugar to get rid of the stickiness which will lighten the colour. So you will have to add more color and then... You get the point right?</li>
<li>Also, if you are colouring you gumpaste in low light /at nighttime, make sure to check the colour under white light, yellow light can be very decieving !! </li>
<li>Humidity is your worst enemy.<br />Another reason to hate the monsoons. Ha!!<br />It makes it difficult to work with gumpaste and sometimes,it gets too humid, once you have covered the cake,made your decoration etc,it begins to get sticky and patchy and pretty much can't be saved.</li>

<li>Always make sure that the surface you are kneading/rolling out the gumpaste on as well as your hands are ABSOLUTELY clean and dry.I've found it handy to keep a small damp and dry towel within reach and wipe the table between using different colours/usuing different batches just to be on the safe side.A lot of gumpaste can get wasted from one streak of dark colour on a light coloured batch. :(</li>
<li>This one's a big one.<br /> Ever heard of cornflour?? Use it!! It's what allows you to ensure that the gumpaste doesn't stick to the table,rolling pin etc. It's easy to dust it off later. Never use plain icing sugar for dusting(I've seen a lot of people do this) ,the icing sugar is a little caorse and does not give you a smooth finish.</li>
<li> When trying to make a complicated design, Break it down. It's easy to panic when it looks very complicated but making small,simpler pieces and then assembeling them together is much easier.<br />Use egg white to stick different pieces together and allow it ample time to dry.</li>
<li>Read up!! Check blogs, books and maybe even just google images to get ideas and pick up little tricks . Nothing works better than learning from other people's mistakes :P:P </li>

GUMPASTE:<br />

Icing sugar 125gm<br />
Gelatin 10gm<br />
Liquid Glucose 10gm<br />
Lemon juice a few drops<br />
Cornflour s required<br />

<li>Dissolve the gelatin powder in 30ml of water in a steel/heatproof bowl and allow it to bloom/rest for 10 min.</li>
<li>Sieve the icing sugar and set it aside.</li>
<li>Simmer some water in a shallow pan . Melt the gelatin alonw with the liquid glucose and stir until it is a smooth mixture. </li>
<li>Now, take this off the heat and slowly pour it into the icing sugar and knead until you get a firm dough. </li>
<li>Store in a ziplock bag and try and use as soon as possible.</li>

The first time I made these, we used them as a base for one of our starters during a buffet in college. They were topped with a mixture of sundried tomatoes and spicy aubergines and finally with cheese.<br />
I didnt really have a recipe, just the basic propotions for shortcrust and we added the amount of garlic and pepper that 'looked' right and it turned out amazing! (there never was such a thing as too much garlic, right?) <br />
Heaven.<br />
Im sure that using this as a crust for a chicken pie would also be a brilliant idea.:)Too often, those poor pies just have a plain boring shortcrust. This will jazz it up a bit !<br />

<b><i><u>Crumbly Pepper Garlic Crackers</u></i></b><br />
<br />
100 gms Flour<br />
70gms Butter (chilled and cubed.)<br />
5gms Salt<br />
50gms Chopped Garlic<br />
10gms Crushed Peppercorns (Black Pepper powder is also a good substitute)<br />
5ml Olive oil<br />
Chilled Water <br />
<br />

<li>Heat the olive oil in a pan, and saute the chopped garlic for 1-2 min until cooked.Leave it aside to cool</li>
<li>Sift the salt along with the flour.Sprinkle in the crushed peppercorns and garlic as well.</li>
<li>Now, add the cubed butter and gentle rub the butter and flour together in your hands over and over again until it begins to resemble the texture of wet sand.Make sure that there are no lumps of butter in the mixture.</li>
<li>Alternatively , you can cut the butter into the flour with a knife .</li>
<li>Ensure that you do not knead the dough while incorporating the butter,otherwise the pastry will become tough.</li>
<li>Now ,sprinkle a little chilled water over the mixture and bring it together into a ball slowly.Again, be careful not to knead it.Use a little additional chilled water if you require.</li>
<li>Flatten it into a thick rectangle, wrap it in clingwrap and refrigerate for half an hour.</li>
<li>Preheat the oven to 160 'C</li>
<li>Dust a clean surface with flour and roll out the chilled dough onto it to about 1/2 cm thick. cut it into small squares or any shape you like and place it on a silpat or lightly greased baking tray.</li>
<li>Bake for 5-7 minutes depending on the size or until the crackers are golden brown around the edges.</li>
<li>Cool and store in an airtight container!!!</li>

You know what I realised recently?<br />
I enjoy home entertaining. It's fun planning a menu and listing out ingredients and cooking for people.We recently had a little lazy afternoon lunch and cocktails thing at home and this spaghetti was one of the dishes I made. When I started cooking I didnt really have a recipe in mind for the spaghetti but I think this came together pretty well.<br />

You can serve it as a main or a small portion as a warm salad, works well both ways. Anyway, it was such a hit that all the entire bowl was over by the end of the evening and I had'nt managed to get a single photo.<br />
So the next morning, I made another batch and packed it up with a few plates and props to get a few nice photos in what was the last of the sunny days. <br />

Ive fallen in love with basil.<br />
It can completely turn a dish around.The one thing you have to be careful of though, is not to add it too early in the cooking process otherwise it turns black and looks limp.<br />
It's best to add in at the very end, or if the food has to be reheated for service at a later stage then add it at that time !!<br />
Many people tend to confuse Tulsi with basil, however although they are closely related their tastes are very different. Basil used in Italian cooking, is a little sweeter while tulsi has an overpowering sort of spicy taste to it. <br />

<u><i><span style="font-size: large;">Creamy Spinach tossed Spinach</span></i></u><br />
<br />
Spaghetti 200 gms<br />
Spinach leaves 200gms(washed) <br />
Garlic 30gms<br />
Onion 20gms<br />
Fresh Cream 50ml<br />
Fresh Basil 5gms <br />
Cheese (optional)<br />
Olive oil 20 ml<br />
Salt to taste<br />
Black pepper(crushed or powder) to taste<br />
<br />
Method:<br />
<ul>
<li>Cook the spaghetti in boiling salted water, till aldente. Blanch the whole spinach leaves in salted water and set aside.</li>
<li>Chop the garlic finely and slice the onions. Drain out as much water as possible from the spinach and roughly chop it up with a knife.</li>
<li>In a pan, heat up the olive oil on med. heat. Add in the garlic and saute for a few minutes. Add in the onion, and cook till it begins to sweat/becomes transparent.</li>
<li>Next, add in the chopped spinachand saute for a few minutes. Pour in the fresh cream and stir to seperate the spinach.</li>
<li>Finally, add in the cooked and drained spaghetti and gently toss or stir it to evenly coat it with the spinach mixture. Sprinkle the cheese and season.</li>
<li>Add the basil leaves and give it a final stir.</li>
<li>Serve hot :)</li>

happen in the spur of a moment.I recently got the opportunity to travel
to a few cities and cook in peoples homes for a project that came out
of the blue.It amazed me how everything just fell into place. I guess I
should stop worrying about the future so much and learn to trust that
everything will ALWAYS work out. (corny, i know, but it's true !!!).<br />
Also , I discovered that they sell passionfruit in Kolkata for 10 bucks!!! WHATTT!! <br />
I know, might seem like a minor development to everyone else, but to me, I'm like : "Oh.My.God." =)<br />
Between the one incident where a rat scurried over my foot in Delhi,
full day power cuts in Chennai, making Idli batter in the hotel room,
eating masala rabit and amazing seafood at Anjappars in
Chennai,laughing mindlessly till 1 am at the hotel coffeeshop and
cooking in kitchens that sometimes were literally 5x3 ft, I got to say,
it.was.amazing.<br />

Sadly, I did'nt think it was necessary to carry my
camera around to Delhi and Chennai and missed out on a lot of fun

It's officially the last days of summer.<br />
Or whats left of it anyway.<br />
One minute its happy and sunny and the next ithe sky is crowded with grey clouds. Last chance to gobble up something icy before you move to to garam chai and vada pav on rainy afternoons and what not.<br />

I made this watermelon and Ginger granita a while back.I like
granitas because the flavour of the main ingredient really comes
through since it's basically just frozen and not diluted .Plus, they're
the laziest ,easiest frozen desserts .EVER.<br />

This watermelon and Ginger granita can literally be made by a
toddler, in my opinion. ( Just be careful when you hand him the
blender, though !! ) It has just three ingredients and requires no

Also, just a word of advice, If you are using a hand held blender, be ABSOLUTLY sure to turn off the main power switch before trying to clean out the blade just incase the wire accidentaly hits the power button while you are cleaning it and your index finger almost gets sliced .<br />

<li>There are'nt any specific quantities for the three, all you need to do is blend them together and adjust according to your taste.</li>
<li>You can also add sugar if you like.Or mint. Or Vodka.</li>
<li> Once, it's well blended, pour it into a shallow, wide container (steel or plastic) are freeze!!</li>
<li>To serve, run a fork along the surface of the frozen juice to obtain icicles :)</li>

I have been having a lot of ideas for cupcakes lately, some fancy, some plain ol' classic ones and some very very pretty ones!!<br />

Here is a batch of cupcakes I had to make for a birthday order. These were for a science professor and I wanted to do something a little different !! :)<br />
Excuse the pictures, they were taken later in the evening just as the light was fading and I was in a big hurry to manage a close up of every cupcake.. <br />

Instead of keeping the base of the cupcake plain, I lined them with blue lines in order to make it look like notebook paper :)<br />

I've been on a little bit of a health kick lately.<br />
You know, egg whites, grilled chicken ,green tea, soup for dinner.. blah blah. the whole shazaam.<br />
Before, you say anything, I know that the picture above definately does'nt prove it, but in my defence the cake is from a few weeks back.<br />

I can't remember the last time I've wasted this much time. What with the last two years spent training, completing journals and cleaning tiles in the college corridors with toothbrushs (catering college woes :/) and waking up at 6 am , the last one month has ben nothing but bliss.<br />

Summer is my favourite time of the year , Simply because Blue skies and sunny afternoons make me very happy. It's hard to explain. However, the only complaint I have is that my hair seems to take on a life of it's own during summer. It behaves like a spoilt, pampered child and I literally have to tie it up kicking and screaming on most days even to make it look remotely normal :/<br />
Over the past few weeks,I also managed to take my first baking class at home, something I've been wanting to do for quite a while now and the chocolate cake here is something that we made on the last baking class which co incidentaly was Mothers day!! :)<br />
I think chocolate cake is utter comfort food. Its the one thing that always works..<br />

<span style="font-size: large;"><i>Easy -Peasy Chocolate Cake:</i></span><br />
<br />
<u>Ingredients:</u><br />
1 2/3 cups All purpose Flour<br />
1 1/2 Cups Sugar<br />
2/3 cup Cocoa Powder<br />
1/2 cup Butter/ Shortening<br />
1 1/2 cup Buttermilk<br />
1 1/2 tsp Baking Soda<br />
1/2 tsp Salt<br />
1 tsp Vanilla essence<br />
2 Eggs<br />

<li>Preheat the oven to 175'C </li>
<li>Line two 9 inch round cake tins with butter paper and grease and dust them with flour.Make sure that they are greased and dusted evenly.</li>
<li>Beat all the ingredients in a large bowl on medium speed for about 1 min. until they are blended properly.</li>
<li>Continue beating on high speed for about 3-4 min.</li>
<li>Immediately pour the batter equally into the two pans and bake for 25-20 min. or until a wooden pick inserted in the center comes out clean.</li>
<li>Cool completely and demould the cake from the pans.</li>
</ul>
<span style="font-size: small;"><i><u>For the truffle filling and topping:</u></i></span><br />
<br />
450gms Dark Chocolate <br />
150 ml Fresh Cream<br />
50 ml Milk (optional)<br />
Light sugar syrup<br />

<li>Melt the fresh cream and Dark chocolate over a double boiler or in a glass bowl in a microwave.</li>
<li>stir properly so that no lumps remain, let the mixture cool and come to room temperature.</li>
<li>Add a little warm milk if required so that the truffle is spreadable.</li>
<li>Sprinke the first layer of cake with some sugar syrup and then Layer the truffle generously between the two cakes.</li>
<li>Sprinkle the top layer of cake with some more sugar syrup and then lightly melt the remaining truffle o that it is easier to spread.</li>
<li>Cover the cake with truffle and even it out with a palette knife.</li>
<li>Decorate as you want!!</li>

I took part in the Nestle Chef competition in college yesterday.As part of the competition we were supposed to use Nescafe coffee powder to create an Indian dessert.Now let me just say, I'm not very good at making Indian desserts. I don't know if it's a mental block or I just struggle with it.So when it comes to making an Indian dessert for a competition I get a serious case of the jitters. Just deciding what to make takes hours or even days. Finally I settled with roasted almond and coffe barfi with caramel sauce and gulab jamun sandwiched with a dense coffee and dark chocolate ganache on orange steeped in cinnamon .</div>

Whoever thought up the brilliant idea that is honeycomb was nothing short of genius.<br />
For years and years I've been hooked on the Cadbury crunchie that Dad would bring home after a sailing trip from abroad. And after searching high and low over many years when I finally did find one in Bombay it was 50 bucks a bar!!<br />
WHAT!!!<br />
Now that's just plain ridiculous!!<br />
So I decided to try it out myself.<br />
One problem though.<br />
Cooking sugar,sort of scares me.<br />
I know,it's just plain ol sugar,what harm can it do. I'll tell you what.<br />
IT CAN BURN.<br />
Anyway, I decided to go ahead and try it out.<br />
and you know what, it's pretty darn easy.<br />
There is still a possibility of it burning, but its easy to make.<br />
<br />I'm not saying that to scare you.<br />
really. :p<br />
Baking Soda is the magic ingredient here.<br />

Honeycomb chocolates:<br />
<br />
Makes one 8inch rectangular cake pan size.<br />
<br />
1 1/2 cups grain sugar<br />
1/4 cup honey<br />
1/4 cup water<br />
1 tbsp Baking soda/Soda bicarb <br />
<br />
<ul>
<li>Line a cake tin with a silpat or a little oil.</li>
<li>Bring the grain sugar, Honey and water to boil in a heavy bottomed saucepan, stirring continuously.</li>
<li>Reduce the heat to medium and continue to let it cook without stirring until the temperature on a candy thermometer reached 300 degrees.</li>
<li>Remove the saucepan from heat, and quickly whisk in the baking soda. The mixture will begin to bubble and rise immediately.</li>
<li>Quickly pour it onto the greased mould/silpat.Once it is on the silpat,do not try to spread it out with a spoon ,the airiness will be lost. Instead, while you are pouring it out itself spread it out.</li>
<li>Let it cool.</li>
<li> While it is cooling, Melt the chocolate and keep aside.</li>
<li>The honeycomb will harden and turn brittle once it is fully cooled.Break it into uneven pieces,and coat each piece in chocolate and let it set.</li>
<li>Store in the refrigerator.</li>
<li>Try and avoid keeping the Honeycomb brittle out without being covered with chocolate for too long as it tends to catch moisture and become sticky.</li>

These are not French macarons.You know,fussy,moody and haughty.<br />
These little cookies are simple,plain-jane and yet not so ordinary.<br />
Because as I've been learning lately,<br />
Sometimes we're so busy running after the french macarons in life,that we completely fail to see the savoiardis.<br />

And then before you know it, just when you least expect it, life will smack you in the face.<br />
<br />
Savoiardis are little Italian cookies. They're also sometimes called Ladys Fingers.(I have no idea why. I'm sure whichever lady's fingers were shaped like THAT would never have wanted to have a cookie named after them!! :P) And in Germany they're called Loffelbiskuit which means Spoon Biscuit. <br />

If you're a fan of Tiramisu you're familiar with Savoiardi.<br />
These are what are traditionally soaked in the coffee Liquor and layered between the light,fluffy Cream cheese mixture. <br />

I was'nt planning to make these. Let me tell you what happened.<br />
This week's Bakery class in college required us to make Tiramisu.<br />
However,the college version uses Chocolate Sponge cake in between the layers. Not even the moist,happy kind.<br />

I was not happy. I take offense to things like that. I mean, C'mon how much longer is it going to take to to make the actual Savoiardis.<br />
Yes, I'm stubborn like that. <br />

So I convinced the Bakery teacher to let me make my own batch of Savoiardi(which I had never made before) to make the tiramisu.<br />
He(surprisingly) said yes :)<br />

50gms Cocoa Powder(for Sprinkling)<br />

<li>Next,gently fols in the Refined flour mixture into the egg mixture in 3 parts,swiftly but gently.Fold until there are no streaks remaining,but make sure not to use too much force,or you will deflate the egg mixture.</li>
<li>Pour the mixture into a piping bag fitted with a large Savoy nozzle and pipe out about 3inchesx 1 inch each.</li>

There have been big 'whohooo' moments and then there have been the 'I-never-want-to-remeber-those-days' moments. There have been "lets go and kick ass' days and there have been "I never want to get out of bed "days. But all in all it's been amazing and filled with lots of love,cookies ,an endless amount of cupcakes and big,gorgeous cakes and lots and lots of sugar :).2011 was the year we pulled off the dessert buffet in college,the year I discovered that cheesecake could be made with Amul cheesepread and the year I realised just how tempremental those darn french macarons really are! ice cream cone even though you have a terrible terrible cold,and add Big chunks of white chocolate to what were supposed to be 'healthy oat' cookies and take hurried photographs of the food you make because your rushing to go out or just plain lazy. Just sometimes.<br />

The strawberries that are available here at the market are not as sweet as I'd like them to be,But I've got to say I'm just happy we're getting them pretty easily atleast.Strawberries have always been somewhat of a risky fruit. I mean,even during season it is hard to get hold of sweet strawberries.These cookies are nice and different since I'm not used to using fresh fruit in cookies.Im sure dehydrated strawberries would taste much better but they're very hard to get a hold of. Also,the strawberries leave water once you cut them which might thin down your batter and give you a very 'cakey' sort of cookie.You can add s happens .a little more flour incaseyou need to adjust the consistency.<br />

11/4 teaspoon baking soda</li>

1 teaspoon ground cinnamon</li>

1 1/4 cup rolled oats</li>
<li class="plaincharacterwrap ingredient">
1/2 cup butter, softened</li>
<li class="plaincharacterwrap ingredient">
3/4 cup brown sugar</li>
<li class="plaincharacterwrap ingredient">
1/4 cup sugar</li>
<li class="plaincharacterwrap ingredient">
1 egg</li>
<li class="plaincharacterwrap ingredient"> 1 cup White chocolate chunks </li>

1 teaspoon vanilla extract</li>

Method:<br />
<br />
<ol>
<li>Preheat the oven to 190 C.</li>
<li>In a small bowl mix together in strawberries and 1/4 cup sugar and set it aside. </li>
<li>Grease a baking tray or line it with a Silpat.</li>
<li>Sift together the flour,baking soda and salt.</li>
<li>In a seperate bowl mix together the butter,sugar,egg and vanilla extract.Stir in the rolled oats.</li>
<li>Fold in the flour mixture little at a time .</li>
<li>Once the flour is properly incorporated,stir in the strawberries and the white chocolate chunks.</li>
<li>Spoon 1 tbsp of the mixture on the baking sheet and flatten it slightly.</li>
<li>Bake at 190 C for about 8-10 min or till the cokkies are golden in colour.</li>
<li>Remove from the baking tray while the cookies are still warm and allow them to cool completely.</li>

Today has been bittersweet.<br />
Considering that it has been a really long time since I've had a whole weekend off and a lazy lazy sunday afternoon without having to worry about interviews or procrastinating studying ; spending all afternoon baking was nothing but pure bliss.<br />

If good ol' chocolate chip cookies are like the girl next door, then french macarons are like the Diva that has an endless list of bossy demands.<br />
Now I've made an attempted to make french macarons before,and I ended up with a flooded mess of macaron batter.Let me be honest here. I'm not really the kind to be called chicken.I mean,I can handle a few bumps and bruises and I've had my fair share of kitchen disasters.But french macarons scare the living daylights out of me.<br />
Wait a second.<br />

What exactly does it mean when people say "scares the living daylights " mean? Nothing in that phrase even makes sense.<br />
I mean,what exactly happens after the living daylights have been scared out of you?Do you black out?<br />
I googled it!<a href="http://www.phrases.org.uk/meanings/living-daylights.html"> here.</a> Knock yourself out!! (No pun intended!)<br />

Anyway,as I was saying,it's pretty easy to be fooled by these gorgeous looking cookies.I mean ,how hard can it be right?<br />
Just whip the egg whites,fold in the almond powder and sugar.Pipe.Rest .Bake.<br />
Right?<br />

Yup,I thought so too.<br />
But apparently, life isn't that easy.<br />
These little fellows turned out to be more moody than I expected..<br />
When I piped them out they looked perfect.They spread just the right amount.They rested well.The shell formed.They got all shiny.And then I put them in the oven.<br />
Kaput!<br />
In less than two minutes,20 out of 25 macarons had cracked.<br />
:(<br />
Luckily I had 3 more batches resting, and everytime I baked them there was some fault or the other.<br />
They cracked,they didnt have 'feet' they stuck to the butterpaper and what not.<br />
So all in all,everything that could go wrong,DID!!!<br />
Oh,I also discovered that you could burn french macarons!! :|<br />
Anyway,I managed to save these two and filled them up :)<br />

I'm still pretty darn scared of making these again,but hey,Third time's a charm right? <br />
