Red Wine Marshmellows


When we 're younger, all our dreams are usually centered around what we're going to be when we get older. "Im going to be an airhostess, or an astronaut or a teacher and whatnot." (or in my brother's case,-a clown!!).
I've been through my own list of what I've wanted to be over the years but it was'nt until I was very much older till I even considered wanting to be a pastry chef. Somewhere along the way,between all the lazy afternoons of baking, late nights of putting together gumpaste figures for an order and endless kitchen disasters with the oven (and my fingers!) it struck me that this was what I could do for the rest of my life.
Bake.
Brulee.
Crumb coat.
Whisk.
Roll out.
Knead.
Layer and stack.
 




 

Sometimes, your love for something ,it blinds you.
You don't consider the drawbacks, the downside.It's hard to admit that something you love so much could have an ugly side. Baking for work is miles away from baking in the comfort of your own kitchen. 
There are deadlines, you can't sit down while you cake is in the oven, sometimes, things get done by shortcut in order to keep up with the high demand, running from the oven to the deep freezer will confuse the heck outta your body.

See, making 20 croissants at home sounds lovely. Now having to make 200 croissants in the span of some 30 minutes; it drives you a little insane sometimes.

I remember the first day I walked into the pastry department at the hotel I was training at. I didnt know which side to look. And ,the walk-in cooler...Whoa!! Trays and trays upon racks filled with pastry cream and frangipane and gulab jamuns and blueberry filling . 
OH. MY. GOD.
So even though it means long hours, and working on holidays, and irregular shifts, baking for work gives me a lot of things I'd never have access to at home.
Ingredients .Techniques.People who are so good at what they do.It teaches you patience, and perfection, from making the same thing a billion times over.

Once in a while,when you manage to get your head above all the sugar, and clingwrap and copious amounts of flour, you realise that it isn't so bad after all. :)




 The original recipe for these marshmellows used Champagne but I decided to substitute it with red wine instead.
Be d, Marshmellows can be a little bit tricky, mostly because you need to get the correct consistency of the sugar syrup before whisking it. But these are totally, absolutly worth it. You can use white wine too. But try and stick to drier varieties since the rest of the recipe is essentially only sugar.

Red Wine Marshmellows
Adapted from bravetart
Makes about 30 pieces.

21 gms gelatin
155gm Red Wine
155gms Liquid Glucose/Corn syrup
225gms Red Wine
396gms grain sugar
1/2 tsp  salt
optional: 1 vanilla bean, seeds scraped and pod reserved for another use

Sifted icing sugar + cornflour for dusting

Method
  • Lightly grease a 9inchx 9 inch square pan. 
  • Combine the gelatin along with the 115gm Red wine in a bowl and set aside. If you are using a stand mixer, combine these two in the stand mixer bowl. 
  •  Pour the 225gms or red wine in a pan and reduce it to half the quantity over medium heat. Weigh the red wine after redcing it to make sure it is now 113gms. If you reduced it a little too much add a little red wine to bring it back to 113gms.
  • In the same pan,to the red wine reduction add the corn syrup, sugar, salt, and vanilla bean scrapings. Set over medium heat and stir gently until the sugar melts.
  • Once the sugar has melted, allow it to cook, without stirring until the mixture reaches 240 degreesF on a candy thermometer. i.e the softball stage.
  • Once it does, take it off the gas and let it cool to about 210 degreesF. If you proceed to the next step while it is too hot, it will prevent the gelatin from setting properly.
  • Next, Pour this mixture into the gelatin/red wine mixture and whisk on medium until the gelatin has melted.
  • Then turn up the speed to high and allow it to whisk until the mixture almost triples in volume.
  • I know this seems a little bit impossible, but don't worry, IT WILL HAPPEN!
  • Shut off the mixer and pour the marshmellow mix into the greased tray quickly. ( Don't be in a such a hurry to  lick the whisk. You can do that later :P )
  • Hit the pan against the table top once or twice to disperse and air bubbles , dust the top with icing sugar, clingwrap and refrigerate overnight.






To demould the marshmellows,run a knife along the side of the pan, reach in with you fingers and gently pull the marshmellow sheet out onto a icingsugar+cornflour dusted cutting board.


  • Dust the top  as well  as the sides.
  • Using a clean knife cut thick strips and immediately roll those in the dusting mixture and set asid.
  • Keep washing and drying the knife between each cutting to make sure you get clean, sharp, even cuts. :)







  •  Finally, cut into suares and dust. Store in the refigerator or eat all at once (Not recomended for your tummy!)

Chocolate cake + toasted marshmellows:)

I cannot resist toasting marshmellows, Burnt on the outside, melty on the inside...my favourite!!

The banana pancake- birthdaycake.

 
Jack Johnsons Banana pancakes was perfect for today.
After an endless week of catering to parties at the hotel (and putting up with demands such as  "I want my sausages more crispy :s ) it's finally sunday.
Jack Johson sure knows how to live it up.


But banana pancakes for me, are more about the song than the food, these days. So since I could'nt actually make a cake( I'm living without an oven!!!!!!!!!! Let's not even go THERE :/) I made banana pancakes with a little something something  to say happy yappy birthday!!
They're so simple...

The monkey incident.

It has been one of those weeks.
Living in Delhi has started to feel like I stuck my head in the freezer and cannot manage to get it out. Which is probably why I now go to work every morning in my thickest sweatshirt ad a scarf wrapped around my face looking like a ninja while everyone else jogs along happily in shorts.
SHORTS!!!?!?
Also I've run out of hankerchiefs and cannot find the entire packet of washing powder I bought yesterday.
My (not so happy) tooth is pounding away at my head  and the dentist here suggested I get implants!!!
Tooth implants. Really???
 No. Freakin'.Way.Mister
Also, I've recently figured out that being an adult includes cleaning the gunk at the bottom of the sink ,paying my own bills and dealing with vagabond monkeys.
Yes, I said monkeys.
Apparently, when I signed on to this I was'nt adequately warned.
 I was making breakfast alone at home in the kitchen and all of a sudden a spot a shadow from the corner of my eye.So, I look to the left,and there it is.
A monkey.
Staring at me.
WHAAAAATT?!!?!?
 I screech and run into the hall and well, there are two more monkeys.
One is holding an orange.
Hilarious, I know.
This is delhi people, anything can happen.
:/
I screech some more.
They look at me like I'm retarded. Then, run out into the balcony.
I try and lock the balcony door. With my luck so far, I fumble.
The monkeys sit in the balcony and finish the orange.
My hands are shaking.
I call up the roommate, the first thing she says is "Seriously?? But I just bought those oranges yesterday!!"

I want to bang her head against the wall and laugh at the same time.

Watching endless episodes of Greys anatomy and moving our living room furniture into the hall to drink tea and eat squid masala keep me sane.
Atleast so far.
Sigh. Real life. Does'nt get better than this, eh?

The Classics: Baked Cheesecake

I was grumpy yesterday morning.
Because I had to travel to Bandra. In.the.pouring.rain.!!
I'm running around (read: postponing packing as much as I can) move soon and yesterday hanging out with three very close girlfriends, chatting over thai pot rice and a very big wedge of chocolate mousse cake I realised that maybe rainy afternoons are'nt all that bad..
And how girlfriends are so under rated!!!
(ermmm....I don't mean this if you are a boy :p )
I mean,imagine if you had to hang out with  boys ALL the time.
Would they be willing to discuss which stall at hill road has the best deals for flats ?
Would they be able to tell you which kajal ACTUALLY does not smudge?
Would they be able to save you from the frizzy hair days that make you look like you got struck by lightning?
Would they not judge you if you wore purple pants???
Would they?
I did'nt think so.

My closest girlfriends have saved my sanity.A million times over.

Anyway...I have some news.....
So I randomly was going through the overview section of the blog yesterday and apparently it's crossed 11,000 views!!!
Whoop !!Whoop!!!
 So I decided to share a classic that I uaually end up making at family celebrations ,or christmas or just when a craving strikes....Baked Cheesecake.




I'm not a big fan of cold set cheesecake...You know, the ones that use hung curd and gelatin and whatnot and then you just let them set in the fridge. Actually I think thats just a plain ol' insult to the amazing dense baked cheesecake.
I mean c'mon ...its cheesecake....DO IT RIGHT!!!!


Baked Cheesecake Cupcakes:
Adapted from BBC GoodFood Issue 1

For the crust
digestive biscuits 180gms
butter 100-150gms
powdered sugar 2tbsp(or as per your taste)
vanilla ess 1/2tsp

  •  Powder the digestive biscuits.Melt the butter and mix all the ingredients for the crust together.It should resemble the consistency of wet sand.A good way to test if you've got the right consistency is to squeeze a portion of it tightly in your hand, it should hold together for a few seconds and not crumble apart immediately.
  • Press this evenly into the base of silicon cupcake moulds. (You can also make a full sized cheesecake instead of these mini ones)
  • Grease the base of the cake tin first if you are'nt using silicon.

For the cheesecake:

 Cream cheese 600gms
 Powdered sugar 200gms
 Eggs                   3
 Fresh cream        200gms
Vanilla essence     a tsp

  • Preheat the oven to 180'C. And heat some water upto boiling point.Combine cream cheese and sugar in a bowl and beat well till smooth.
  • Add oin the eggs, one at a time, mixing well between each addition.Make sure to scrape the sides and bottom of the bowl from time to time so u dnt get lumps at the end.
  • Add in vanilla ess and cream and beat well till blended.
  • Pour over the crust and tap the mould on the table once to get rid of any air bubbles
  • Place the mould into a waterbath with wateralmost upto halfway upto the sides of the cheesecake tin
  • Cover with tin foil and Bake at 180'C for about 12 min.The cakes should still have a bit of a jiggle in the center.
  • |Turn of the oven and let it rest in the oven for abt 40 min
  • Chill the cheesecakes overnight. (if I'm in a hurry I allow them to set in the freezer for a few hours instead)
  • Serve topped with fresh fruit...mango/strawberry/or any berry syrup or preserve work well!!!

Mojito Cupcakes

It's too darn grey :/
Not a colour I'm particularly fond of, especially when it comes with slushy muddy streets .
eeeeks.

 Luckily even though it was lazy and rainy all day yesterday, right when these were done in the oven, the sun came up for just a few mintues to help me pretty up the pictures.
Boo yeah.

Once in a while you come across a recipe that you just HAVE to try. Now, most people just look at the pretty pictures in magazines or cookbooks and move on . But every now and then, the skies open up and a light shines through and you know that there will no longer be peace in the universe until you make the recipe.
 This recipe was  for a mojito cake that I saw on Masterchef Australia  sometime last week, and after that I've been waiting to try it , every chance I get.
After all, EVERYTHING is better with rum.
Or so they say.


 This lil' pigeon has managed to make a nest in one of the flowerpots outside our window and she is now sitting nice and toasty on three tiny eggs!!

So, it's safe to say that all is well in the universe again, because I managed to whip these up and share em' with some very happy (and lucky, mind you :P:P) friends yesterday.
These are my version of friendship bands.
I have a feeling I've just started a new tradition here.

While I was watching the Masterclass episode where these were made, they seemed pretty darn easy. Its just a simple cake, a buttercream frosting and a little flavoured syrup. After that it's just a matter of assembling it all.
The cake is all fancy because it does'nt use baking powder/baking soda for leavening, the eggs do all the work!! It's called a Genoise sponge, and honestly, I'd be lying if I said I was'nt a bit worried. But they turned out perfectly!!!

Mojito Cupcakes

Masterchef Australia season 4

For the syrup:
30gm sugar+ 45ml rum+ 10 ml limejuice+Zest of 1 lemon+Mint leaves+ 100 ml water
heat all the ingredients in a pan till the sugar has just dissolved and turn off the heat, and leave to infuse.

For the Genoise Spongecake:
6 eggs
260gms Castor sugar
150gms melted Butter
260gms Refined flour

  •  Preheat the oven to 180'C
  • Whisk the eggs and castor sugar over a double boiler with an electric whisk. Continue to whisk until the mixture reaches a ribbon consistency. ( About 10 minutes).You can test it by lifting a little mixture with a spoon and drooping it back into the bowl, while moving the spoon. the misture should not sink immediately and should leave a visible trail.
  • Once it reaches this stage, whisk it off the double boiler for a few minutes to cool it slightly. Now pour in the melted butter along the sides of the bowl and slowly fold it in.
  • Pour in the flour in the same manner a little at a time and fold it in. This is done to make sure that you don't knock out the air from the batter as this is what will allow the cake to rise in the oven. Moving the batter around too much, or not folding ingredients in gently will cause it to loose all the air you whisk into the eggs.
  • Pour the batter into cupcake cases and bake immediately for 10 minutes or until a skewer comes out clean.
  • Cool the cupcakes.
Mint and lemon Buttercream:

150gms unsalted butter
300gms Sifted Icing sugar
5gms Mint leaves
Zest of 2 lemons

  • Whisk the butter until slightly creamy.now add in the icing sugar a little at a time, whisking continuously. Once all the icing sugar is almost added in, add in the mint leaves and lemon zest and whisk.
  • Pipe or spread on the cupcakes and top with a lemon wedge.
  • * Do NOT skip the lemon wedge!!! I know squeezing lemon juice on a cupcake before eating it might sound weird, but the little burst of lemon juice over the buttercream icing just before eating the cupcake it what makes it beyond heaven!!!
